Applesauce

We have an apple tree with green apples that are almost ripe. I'm trying to figure out what to do with them. Anyone know an easy way to make applesauce? I think my mother-in-law has an attachment to a Kitchen-Aid that somehow spits out the seeds of quartered apples, and I'm hoping to borrow it. However, I have never made applesauce before and would appreciate some help or links to helpful websites.

I've canned applesauce before, but my friend who helped me had this incredibly helpful little gadget that you stuck the cooked apples in (peels, stems and all!) and cranked the handle. All the applesauce came out beautifully on one side and all the other gunk came out the opposite side. I think the box just called it a hand cranked food processor. You could probably buy them near the canning supplies. I'm guessing it would cost about $30 or so, but I could be wrong. Anyway, after making it into sauce, you could add sugar and/or cinnamon to taste (I chose not to add any at all) and then we bottled it and put it in a hot water bath canner. So easy and so yummy!

I would recommend not wasting your time on applesauce and instead make 100 apple crisps over the next 100 days. Yum.

My mother in law makes apple pie filling and freezes it so she can just take it out and use it whenever she wants. My personal favorite is dried apples but I have no idea how to make them. Just some suggestions so you don't have to make/eat 100 lbs of apple sauce.
